Gusto had been on our radar for a while for their quality Italian offering, so when they approached us to evolve their restaurant experience, we jumped at the chance.

Gusto has always been a brand with authenticity and integrity, born out of a genuine love for Italian cooking. It comes across in their food, but guests aren’t just visiting for a killer Carbonara. The environment already had some great things going for it – their famous twinkling olive trees for one, adding a bit of extra sparkle to your evening meal.

The quality of their offering meant they had become synonymous with special occasions, so some guests were only using the brand in the evening and overlooking the opportunity through the other day parts.

With the CEO Matt Snell’s desire to introduce new offers and experiences across the board, we had the opportunity to really go to town and evolve their current experience to create an all-day offering that would bring everyone in while the sun’s still up.

Our solution was simple; to move on their current experience with a new design scheme that retained all the good stuff and create the ultimate love story to modern Italy through an alluring mix of new colour, texture and materiality – inspired by the Italian coastline.

All the best bits were kept in, including the twinkling olive trees, but we also added cosy booths, new feature seating and a private dining area with luxurious velvet curtains to elevate the experience.

The completely open kitchen and unique artisan table puts guests in thick of the action, surrounded by the sights, sounds and smells of great artisan chefs doing their thing – crafting fresh Italian food using traditional techniques. It’s at this artisan table that guests can book the new Pizza Experience, an interactive experience where guests are hosted by their own chef, who helps them prepare and cook their very own pizzas – perfect for groups, work parties or special occasions.

In the morning, it’s all about the new espresso bar and freshly made cannoli counter, which sits proudly in the window, with the tempting smell of coffee spilling out onto the street to entice passers-by in for a morning caffeine hit and sweet treat. 

Then it becomes all about brunch, with bottomless bubbles to be enjoyed on the huge sharing tables.

The result? Well, we think our new restaurant design has taken all that was special about the brand and made it even better, with experiences that make all dayparts special. Nothing beats seeing it in person, and you can grab a cannoli while you’re there…
